- 2 boneless, skinless chicken breasts
- 1 cup crushed potato chips (any flavor)
- 1/4 cup all-purpose flour
- 1 egg, beaten
- 2 tablespoons vegetable oil
Instructions
- Preheat your oven to 400°F (200°C).
- Cut chicken breasts in half horizontally to create thinner cutlets.
- Set up a dredging station: one shallow dish with flour, one with the beaten egg, and one with the crushed potato chips.
- Dredge each chicken cutlet first in the flour, then dip in the egg, and finally coat thoroughly with the crushed potato chips.
- Heat vegetable oil in an oven-safe skillet over medium-high heat.
- Sear the coated chicken cutlets for 2-3 minutes per side until golden brown.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Let rest for a few minutes before serving.
