Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 lb carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until soft, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Add carrots and vegetable broth to the pot.
  5. Bring the mixture to a boil, then reduce heat and simmer until carrots are tender, about 15-20 minutes.
  6. Remove the pot from the heat.
  7. Carefully transfer the soup to a blender or use an immersion blender to blend until smooth.
  8. Return the soup to the pot. Stir in heavy cream, salt, and pepper.
  9. Heat gently until warmed through. Do not boil after adding cream.
  10. Serve hot.
