  • 1 (9 inch) pre-baked pie crust
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup sweetened flaked coconut, toasted
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together the coconut milk, granulated sugar, cornstarch, and salt.
  2. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 8 to 10 minutes. Do not let it boil rapidly.
  3. In a small bowl, whisk the egg yolks. Temper the yolks by slowly whisking about 1/2 cup of the hot coconut mixture into the yolks.
  4. Pour the tempered yolk mixture back into the saucepan with the remaining coconut mixture. Cook over medium-low heat, stirring constantly, for 1 minute more. Do not boil.
  5. Remove from heat. Stir in the butter and 1 teaspoon of vanilla extract until the butter melts.
  6. Stir in 1/2 cup of the toasted flaked coconut.
  7. Pour the filling into the pre-baked pie crust. Cover the surface directly with plastic wrap to prevent a skin from forming. Chill for at least 3 hours, or until completely firm.
  8. When ready to serve, beat the heavy whipping cream, powdered sugar, and 1/2 teaspoon vanilla extract until stiff peaks form.
  9. Spread or pipe the whipped cream over the chilled filling. Sprinkle the remaining 1/2 cup of toasted coconut over the top.
  10. Slice and serve immediately.

Notes

  • Toast the flaked coconut in a dry skillet over medium heat, stirring often, until golden brown. Watch carefully as it burns quickly.
  • For best results, use full-fat coconut milk, not the light version.
