Description
A simple recipe for a moist quick bread with a sweet cinnamon ribbon throughout.

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup packed light brown sugar (for swirl)
- 1 tablespoon ground cinnamon (for swirl)
- 2 tablespoons unsalted butter, melted (for swirl)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing just until combined. Do not overmix.
- In a small bowl, mix the brown sugar and 1 tablespoon of cinnamon.
- Pour half of the batter into the prepared loaf pan. Drizzle with half of the melted butter and sprinkle with half of the cinnamon-sugar mixture.
- Pour the remaining batter over the top. Drizzle with the remaining melted butter and sprinkle with the remaining cinnamon-sugar mixture.
- Use a knife to gently swirl the topping into the batter a few times.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- For a stronger cinnamon flavor, increase the swirl cinnamon to 1 1/2 tablespoons.
- You can use buttermilk instead of milk for a slightly tangier result.
