Description

Simple recipe for grilled chicken skewers served with a savory peanut dipping sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 12 wooden skewers, soaked in water for 30 minutes
  • For the Sauce: 1/2 cup creamy peanut butter
  • 1/4 cup hot water
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. In a bowl, combine soy sauce, brown sugar, vegetable oil, cumin, coriander, turmeric, and cayenne pepper.
  2. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  3. While the chicken marinates, prepare the peanut sauce. In a small saucepan, whisk together peanut butter, hot water, soy sauce, lime juice, brown sugar, ginger, and garlic over low heat until smooth. Remove from heat and set aside.
  4. Thread the marinated chicken pieces onto the soaked skewers, leaving a small space between each piece.
  5. Preheat your grill or grill pan to medium-high heat. Lightly oil the grates.
  6. Grill the skewers for 4 to 6 minutes per side, until the chicken is cooked through and has nice grill marks.
  7. Serve the chicken satay immediately with the peanut sauce for dipping.

Notes

  • If you do not have wooden skewers, you can use metal skewers or simply cook the marinated chicken pieces directly on the grill.
  • For a thinner sauce, add a little more hot water, one teaspoon at a time, until you reach your desired consistency.
