Description

A simple baked casserole with chicken, spinach, and a creamy sauce.


Ingredients

  • 2 cups cooked, shredded chicken
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup bread crumbs (optional topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the shredded chicken, dry spinach, cream of chicken soup, milk, cheddar cheese, onion, garlic powder, salt, and pepper. Mix until everything is well combined.
  3. Spread the mixture evenly into the prepared baking dish.
  4. If using, sprinkle the bread crumbs over the top of the mixture.
  5. Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown.
  6. Let the casserole stand for 5 minutes before serving.

Notes

  • You can substitute cream of mushroom soup for cream of chicken soup if desired.
  • For a richer flavor, add 1/4 cup of sour cream to the mixture.
  • Use leftover rotisserie chicken for quick preparation.
