A simple recipe for creamy, cheesy chicken and orzo pasta.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken pieces and cook until browned and cooked through. Remove chicken and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in orzo pasta and cook for 2 minutes, stirring constantly.
- Pour in chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes, or until orzo is tender and most liquid is absorbed.
- Stir in heavy cream, cheddar cheese, and Parmesan cheese until melted and smooth.
- Return the cooked chicken to the skillet. Stir to combine.
- Season with salt and pepper to your liking.
Notes
- You can substitute Gruyere cheese for Parmesan for a different flavor.
- For a richer sauce, use half-and-half instead of heavy cream.
