Description

A simple recipe for sweet, glazed acorn squash.

Ingredients

Scale
  • 2 medium acorn squash
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/4 cup water
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. Cut the acorn squash in half lengthwise and scoop out the seeds and stringy parts.
  3. Place the squash halves cut-side up in a baking dish.
  4. In a small bowl, mix the brown sugar, melted butter, water, cinnamon, and nutmeg until combined.
  5. Spoon the sugar mixture evenly over the cut surface of each squash half.
  6. Pour about 1/4 inch of water into the bottom of the baking dish.
  7. Bake for 45 to 60 minutes, or until the squash is tender when pierced with a fork.
  8. Baste the squash with the pan drippings halfway through baking.
  9. Serve warm.

Notes

  • You can substitute maple syrup for the water if you prefer a richer flavor.
  • For easier serving, scoop the flesh out after baking and mix it with the glaze.
