Description

A simple baked casserole combining cooked rice, shredded chicken, buffalo sauce, and cheese.


Ingredients

  • 2 cups cooked white rice
  • 2 cups cooked, shredded chicken breast
  • 1 cup buffalo wing sauce
  • 1 cup cream of chicken soup (canned)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped green onion (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked rice, shredded chicken, buffalo wing sauce, cream of chicken soup, and sour cream. Mix until all ingredients are evenly coated.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Sprinkle the cheddar cheese and Monterey Jack cheese over the top of the mixture.
  5. Bake for 25 to 30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  6. Remove from the oven and let it rest for 5 minutes before serving. Garnish with chopped green onion.

Notes

  • You can use rotisserie chicken for faster preparation.
  • Adjust the amount of buffalo sauce to control the heat level.
  • For a crispier top, add a layer of crushed crackers mixed with melted butter during the last 10 minutes of baking.
