Description

A simple cake recipe that mimics the flavors of Boston Cream Pie using a poke cake method.


Ingredients

  • 1 box yellow cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 1 cup cold milk
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 4 ounces semi-sweet chocolate
  • 2 tablespoons butter

Instructions

  1. Prepare the cake batter according to the box directions, substituting the required water, oil, and eggs.
  2. Pour the batter into a greased and floured 9×13 inch baking pan.
  3. Bake at 350 degrees Fahrenheit for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let the cake cool for 10 minutes.
  5. Use the handle of a wooden spoon or a fork to poke holes all over the top of the warm cake, about 1 inch apart.
  6. In a medium bowl, whisk together the instant vanilla pudding mix and cold milk until smooth.
  7. Pour the pudding mixture evenly over the top of the poked cake, allowing it to soak into the holes.
  8. Refrigerate the cake for at least 1 hour.
  9. While the cake chills, prepare the chocolate glaze. Combine the heavy cream and powdered sugar in a small saucepan over medium heat. Heat until small bubbles form around the edges, but do not boil.
  10. Remove the cream mixture from the heat. Add the chopped chocolate and butter. Stir until the chocolate and butter are completely melted and the glaze is smooth.
  11. Pour the chocolate glaze evenly over the chilled cake.
  12. Refrigerate the cake for another 30 minutes before slicing and serving.

Notes

  • You can use a store-bought chocolate ganache instead of making the glaze from scratch for a quicker option.
  • Make sure the pudding is fully set before adding the chocolate topping.
