Ingredients

- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup milk
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh or frozen blueberries
- Vegetable oil for frying
- 1/2 cup powdered sugar for glaze
- 1 tablespoon milk for glaze
Instructions
- Whisk together flour, sugar, baking powder, and salt in a medium bowl.
- In a separate bowl, whisk together milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
- Gently fold in the blueberries.
- Heat about 2 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
- Carefully drop spoonfuls of batter into the hot oil, frying about 4 to 5 at a time.
- Fry for 2 to 3 minutes per side, until golden brown.
- Remove fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- While the fritters cool slightly, whisk together powdered sugar and 1 tablespoon of milk to make a thin glaze.
- Drizzle the glaze over the warm fritters before serving.
Notes
- If using frozen blueberries, do not thaw them before adding to the batter.
- Maintain the oil temperature consistently for even cooking.
- You can substitute cinnamon for vanilla extract for a different flavor profile.
