Ingredients

  • Vegetable oil for frying
  • 1/2 cup powdered sugar for glaze
  • 1 tablespoon milk for glaze

Instructions

  1. Whisk together flour, sugar, baking powder, and salt in a medium bowl.
  2. In a separate bowl, whisk together milk, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  4. Gently fold in the blueberries.
  5. Heat about 2 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).
  6. Carefully drop spoonfuls of batter into the hot oil, frying about 4 to 5 at a time.
  7. Fry for 2 to 3 minutes per side, until golden brown.
  8. Remove fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  9. While the fritters cool slightly, whisk together powdered sugar and 1 tablespoon of milk to make a thin glaze.
  10. Drizzle the glaze over the warm fritters before serving.
