Ingredients

  • 1 1/2 cups fresh blueberries
  • For Streusel: 1/2 cup all-purpose flour
  • For Streusel: 1/4 cup packed brown sugar
  • For Streusel: 1/4 teaspoon ground cinnamon
  • For Streusel: 2 tablespoons cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Grease and flour a 9-inch square baking pan.
  2. In a medium bowl, whisk together the 1 3/4 cups flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  6. Gently fold in the fresh blueberries.
  7. Pour the batter into the prepared baking pan.
  8. Prepare the streusel: In a small bowl, combine the 1/2 cup flour, brown sugar, and cinnamon. Cut in the cold butter using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  9. Sprinkle the streusel evenly over the top of the batter.
  10. Bake for 40 to 45 minutes, or until a wooden pick inserted into the center comes out clean.
  11. Let the cake cool in the pan on a wire rack before slicing and serving.

Notes

  • Gently toss the blueberries with one tablespoon of the measured flour before folding them into the batter to prevent sinking.
  • You can substitute frozen blueberries for fresh, but do not thaw them before using.
