Easy-to-make baked oatmeal bars filled with mixed berries.

- 1 1/2 cups rolled oats
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup packed brown sugar
- 1/4 cup melted unsalted butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mixed fresh or frozen berries
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang.
- In a medium bowl, mix the rolled oats, flour, baking soda, and salt.
- In a separate bowl, whisk together the brown sugar, melted butter, egg, and vanilla extract until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the mixed berries.
- Press the mixture evenly into the prepared baking pan.
- Bake for 25 to 30 minutes, or until the edges are golden brown and the center is set.
- Let the bars cool completely in the pan before lifting them out using the parchment overhang.
- Cut into squares.
Notes
- If using frozen berries, do not thaw them before adding them to the batter.
- You can substitute other fruits like chopped apples or dried cranberries for the berries.
