  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/4 cup melted unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh or frozen berries

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang.
  2. In a medium bowl, mix the rolled oats, flour, baking soda, and salt.
  3. In a separate bowl, whisk together the brown sugar, melted butter, egg, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Gently fold in the mixed berries.
  6. Press the mixture evenly into the prepared baking pan.
  7. Bake for 25 to 30 minutes, or until the edges are golden brown and the center is set.
  8. Let the bars cool completely in the pan before lifting them out using the parchment overhang.
  9. Cut into squares.

Notes

  • If using frozen berries, do not thaw them before adding them to the batter.
  • You can substitute other fruits like chopped apples or dried cranberries for the berries.
