Description
A simple recipe for making fried rice similar to the style served at Benihana.
Ingredients

- 2 cups cooked white rice, day-old preferred
- 1 tablespoon vegetable oil
- 1/2 cup chopped yellow onion
- 1/2 cup chopped carrots
- 1/2 cup frozen peas and corn mix
- 2 large eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon ground white pepper
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chopped onion and carrots. Cook for 3 minutes until slightly softened.
- Add the peas and corn mix. Cook for 1 minute more.
- Push the vegetables to one side of the pan. Pour the beaten eggs onto the empty side. Scramble the eggs until just cooked through, then mix with the vegetables.
- Add the cold rice to the pan. Break up any clumps with a spatula. Stir-fry for 3 to 4 minutes until the rice is heated through.
- Pour the soy sauce over the rice mixture. Stir well to coat everything evenly.
- Remove the pan from the heat. Stir in the sesame oil and white pepper.
- Serve immediately.
Notes
- Using cold, day-old rice prevents the final dish from becoming mushy.
- Adjust the amount of soy sauce based on your preference for saltiness.
