Description

A simple recipe for potato salad featuring bacon.


Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 6 slices bacon, cooked and crumbled
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup sweet pickle relish
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, chopped
  • 2 hard-boiled eggs, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the cubed potatoes in salted water until tender. Drain and let them cool slightly.
  2. In a large bowl, combine the cooled potatoes, crumbled bacon, celery, red onion, and chopped eggs.
  3. In a separate small bowl, whisk together the mayonnaise, mustard, and pickle relish.
  4. Pour the dressing over the potato mixture.
  5. Gently mix all ingredients until everything is coated.
  6. Season with salt and pepper to your preference.
  7. Cover the bowl and chill in the refrigerator for at least 2 hours before serving.
