A simple recipe for potato salad featuring bacon.
Ingredients

- 2 lbs potatoes, peeled and cubed
- 6 slices bacon, cooked and crumbled
- 1 cup mayonnaise
- 1/4 cup yellow mustard
- 1/4 cup sweet pickle relish
- 1/2 cup celery, chopped
- 1/4 cup red onion, chopped
- 2 hard-boiled eggs, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Boil the cubed potatoes in salted water until tender. Drain and let them cool slightly.
- In a large bowl, combine the cooled potatoes, crumbled bacon, celery, red onion, and chopped eggs.
- In a separate small bowl, whisk together the mayonnaise, mustard, and pickle relish.
- Pour the dressing over the potato mixture.
- Gently mix all ingredients until everything is coated.
- Season with salt and pepper to your preference.
- Cover the bowl and chill in the refrigerator for at least 2 hours before serving.
Notes
- For best flavor, use Yukon Gold or Russet potatoes.
- You can hard-boil the eggs while the potatoes are cooking to save time.
