Ingredients

- 1 cup orzo pasta
- 1 large ripe avocado, diced
- 1/2 cup crumbled feta cheese
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- Cook orzo pasta according to package directions until tender. Drain and rinse with cold water to cool it down.
- In a large bowl, combine the cooled orzo, diced avocado, crumbled feta cheese, chopped red onion, and fresh parsley.
- In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper.
- Pour the dressing over the orzo mixture.
- Gently toss all ingredients together until everything is evenly coated.
- Serve immediately or chill before serving.
Notes
- For best texture, dice the avocado just before assembling the salad.
- You can add a pinch of dried oregano for extra flavor.
