Description

A taste of Spain’s best flavors with this authentic paella recipe.


Ingredients

  • 1/2 cup olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 pound Spanish chorizo, sliced
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 1 (28 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 2 cups bomba rice
  • 1 pound large shrimp, peeled and deveined
  • 1 pound mussels, scrubbed and debearded
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • 1 lemon, cut into wedges

Instructions

  1. Heat olive oil in a large paella pan or skillet over medium-high heat. Add chicken and chorizo and cook until browned, about 5-7 minutes. Remove chicken and chorizo from pan and set aside.
  2. Add onion and bell pepper to the pan and cook until softened, about 5 minutes. Add garlic and paprika and cook for 1 minute more until fragrant.
  3. Stir in saffron and diced tomatoes. Bring to a simmer and cook for 5 minutes.
  4. Return chicken and chorizo to the pan. Pour in chicken broth and bring to a boil. Stir in rice and season with salt and pepper.
  5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Arrange shrimp and mussels on top of the rice. Cover and cook for another 5-7 minutes, or until shrimp are pink and mussels have opened.
  7. Stir in peas and parsley. Garnish with lemon wedges and serve immediately.

Notes

  • For a more authentic flavor, use bomba rice, a short-grain Spanish rice that absorbs liquid well.
  • If you don’t have a paella pan, a large, shallow skillet will work.
  • Adjust the amount of saffron to your preference.
