Description
Simple baked bundles of asparagus wrapped in crispy phyllo dough.

- 1 bunch asparagus, trimmed
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 8 sheets phyllo dough, thawed
- 4 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Toss the trimmed asparagus with olive oil, Parmesan cheese, and black pepper in a bowl.
- Lay one sheet of phyllo dough flat. Brush the entire surface lightly with melted butter.
- Place a second sheet directly on top of the first. Brush this second sheet with butter.
- Cut the stacked phyllo sheets in half crosswise to create two rectangles.
- Place a small bundle of asparagus (about 1/8 of the total) near one short end of the phyllo rectangle.
- Fold the short end over the asparagus. Fold the long sides inward toward the center. Roll the bundle tightly toward the remaining short end.
- Place the finished bundle seam-side down on a baking sheet lined with parchment paper.
- Repeat the wrapping process with the remaining phyllo, butter, and asparagus.
- Brush the tops of the finished bundles lightly with any remaining melted butter.
- Bake for 12 to 15 minutes, or until the phyllo is golden brown and crisp.
Notes
- If your asparagus spears are very thick, you may need to blanch them for 2 minutes before assembling the bundles.
- You can substitute Gruyere cheese for Parmesan if you prefer a different flavor.
