A simple recipe for soft, cake-like cookies using buttermilk.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup powdered sugar for dusting
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Gradually add the flour mixture alternately with the buttermilk, mixing until just combined after each addition. Do not overmix.
- Drop rounded teaspoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8 to 10 minutes, or until the edges are lightly set.
- Remove cookies from the oven and let them cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
- Once cooled, lightly dust the tops of the cookies with powdered sugar.
Notes
- For a slightly tangier cookie, use fresh buttermilk.
- You can substitute sour cream for buttermilk if needed, using the same amount.
