Description

Simple recipe for crispy zucchini and corn fritters made in an air fryer.


Ingredients

  • 1 cup shredded zucchini, squeezed dry
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil spray

Instructions

  1. Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  2. In a medium bowl, combine the dry zucchini, corn kernels, flour, beaten egg, Parmesan cheese, salt, and pepper. Mix until just combined. Do not overmix.
  3. Preheat your air fryer to 380°F (195°C).
  4. Lightly spray the air fryer basket with olive oil spray.
  5. Form the mixture into small, flat patties, about 2 inches wide. You should get 6 to 8 fritters.
  6. Place the fritters in the air fryer basket in a single layer, working in batches if necessary.
  7. Spray the tops of the fritters lightly with olive oil spray.
  8. Air fry for 8 to 10 minutes, flipping halfway through, until golden brown and cooked through.
  9. Serve immediately.

Notes

  • For extra flavor, add 1 tablespoon of chopped chives to the batter.
  • Serve with a dollop of plain Greek yogurt or sour cream mixed with a squeeze of lemon juice.
