Simple recipe for crispy zucchini and corn fritters made in an air fryer.
Ingredients

- 1 cup shredded zucchini, squeezed dry
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1 large egg, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon olive oil spray
Instructions
- Place the shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
- In a medium bowl, combine the dry zucchini, corn kernels, flour, beaten egg, Parmesan cheese, salt, and pepper. Mix until just combined. Do not overmix.
- Preheat your air fryer to 380°F (195°C).
- Lightly spray the air fryer basket with olive oil spray.
- Form the mixture into small, flat patties, about 2 inches wide. You should get 6 to 8 fritters.
- Place the fritters in the air fryer basket in a single layer, working in batches if necessary.
- Spray the tops of the fritters lightly with olive oil spray.
- Air fry for 8 to 10 minutes, flipping halfway through, until golden brown and cooked through.
- Serve immediately.
Notes
- For extra flavor, add 1 tablespoon of chopped chives to the batter.
- Serve with a dollop of plain Greek yogurt or sour cream mixed with a squeeze of lemon juice.
