Simple recipe for making crispy fish cakes using an air fryer.
Ingredients

- 1 pound white fish fillets (cod, haddock, or pollock), cooked and flaked
- 1 cup mashed potato, cooled
- 1/4 cup finely chopped onion
- 2 tablespoons fresh parsley, chopped
- 1 large egg, lightly beaten
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup breadcrumbs (for coating)
- Cooking spray
Instructions
- In a large bowl, combine the flaked fish, mashed potato, onion, parsley, egg, mustard, salt, and pepper. Mix gently until just combined. Do not overmix.
- Shape the mixture into 8 equal patties, about 1 inch thick.
- Place the breadcrumbs on a shallow plate. Lightly coat each fish cake with breadcrumbs, pressing gently so they adhere.
- Preheat your air fryer to 380 degrees Fahrenheit (195 degrees Celsius).
- Lightly spray the air fryer basket with cooking spray.
- Place the fish cakes in a single layer in the air fryer basket, working in batches if necessary. Spray the tops of the fish cakes lightly with cooking spray.
- Air fry for 10 to 12 minutes, flipping halfway through, until golden brown and heated through.
- Serve immediately.
Notes
- Use leftover cooked fish for quicker preparation.
- For extra crispiness, chill the formed patties for 15 minutes before breading.
