Description
Crispy avocado fries made quickly in an air fryer.
Ingredients

- 2 ripe but firm avocados
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Cut the avocados into thick fry shapes, about 1/2 inch thick.
- Set up a breading station with three shallow dishes. Place flour in the first dish.
- Place the beaten eggs in the second dish.
- Mix the panko breadcrumbs, salt, and pepper in the third dish.
- Dredge each avocado fry first in the flour, shaking off excess.
- Dip the floured fry into the egg mixture, letting excess drip off.
- Coat the egg-dipped fry thoroughly in the breadcrumb mixture.
- Place the coated fries in a single layer in the air fryer basket. You may need to work in batches.
- Lightly spray the tops of the fries with cooking spray.
- Air fry at 380F (195C) for 8 to 10 minutes, flipping halfway through, until golden brown and crisp.
- Serve immediately.
Notes
- Serve these fries with a lime wedge or your preferred dipping sauce.
- Do not overcrowd the air fryer basket for best crisping results.
